LOVE FOR THAI

For all my CHEFS:
If you love Thai and have tried making it at home and it's flopped, try this simple and easy Chicken Pad Thai Recipe:

INGREDIENTS:
-serves 2-3
-8-10 oz thin Thai-style rice noodles
-1 cup of raw chicken
-Marinade for Chicken: 2 tbsp of cornstarch dissolved in 2 tbsp of soy sauce
-4 cloves garlic, minced
-3 cups of fresh bean sprouts
-3 spring green onions
-1 cup of fresh coriander
-1/3 cup of crushed peanuts
-1/2 cup of chicken stock
-1/4 cup of ground pepper

PAD THAI SAUCE:
-3/4 tbsp of tamarind paste dissolved in 1/4 cup of water
-2 tbsp fish sauce
-1-3 tbsp chili sauce
-3 tbsp brown sugar
-lime wedges

PREPARATION:
1.Place noodles in a pot of water over the stove to boil. Bring to a near boil then remove from heat
2.Make the Pad Thai sauce by combining the sauce ingredients in a cup. Stir well to dissolve both the tamarind paste and the brown sugar
3.Place chicken slices in a small bowl. Pour the marinade over the chicken
4.Check the noodles. Note that you will be frying the noodles later, so you don't want to soften them too much. Drain and rinse them in cold water
5.Warm up a wok or large frying pan up to medium heat.  When it is heated place 1/2 tbsp oil plus garlic
6.Add the chicken with the marinade. Stir fry in the wok for about one minute
7. Now begin adding some of the chicken stock, and keep the chicken frying nicely for about five minutes
8.Add the noodles and pour the Pad Thai sauce over the noodles
9.Fry the noodles for about 1-2 minutes
10.Add the bean sprouts and sprinkle of the pepper, toss for about one minute
11.Taste test the noodles before adding seasoning
12.To serve life the noodles onto a serving plate, top off with fresh coriander, onion and crushed peanuts.
